Instructions
  1. Turn on grill to warm up while on the hob add the coconut oil to a frying pan on a medium heat.
  2. Add the pancetta and cook until slightly brown and beginning to crisp
  3. Add the sliced mushrooms, baby sweetcorn and courgettes. Cook until mushrooms begin to brown.
  4. Add chopped tomatoes then pour in the whisked egg.
  5. Cook for a further 30 seconds while sprinkling over the crumbled feta.
  6. Place under the grill until golden on top. Sprinkle with freshly ground black pepper and serve!
